Looking for help with diet and nutrition plan...

Hi guys! i'm begging for help with my nutrition plan going forward. It seems I have stalled a bit. I am about 38 years old, male, about 6' 307lbs. I bartend, so my job can keep me pretty active for about 6 hours 4 days a week. I was 345 lbs in January of this year. In the past thirty days, I have taken my caloric intake to about 1000 to 1200 a day. I try to keep the food intake during the day in smaller 3-400 calorie meals. I sometimes miss the meals at lunch time and even afternoon because I bartend during the day. This can kill the opportunities to keep my metabolism up. In the past 30 days ish, I have gone from 330lbs to 308. I have stalled at 308 for the past four days though. I work out at night before bed. I've kept to about 30-60 minutes cardio each workout. I've been doing more lite weight training to get my muscles to remember that they are there and spacing them out by muscle groups. I would prefer to keep this a stimulant free diet, but if I can find things otc that would be helpful and not too over the top, that would be fine as well. Please help with some nutrition and/or workout plans that are somewhat low impact as i have two torn rotators and a torn meniscus. My cardio has been alternated between jumprope, elliptical, and stairs. I realize the jumprope isn't low impact, but I love doing it since I used to kickbox years ago. All help is appreciated!!
