Low Carb Diet Menu

Hi everyone, I'm bored today and in a cooking withdrawal so I thought I could help some people with menu ideas. I've been cooking low carb for chris for years and what comes naturally to me, might help someone struggling. I'll post new menu ideas often and hopefully give you some fresh ideas that keep the carbs down to make hot bodies:) We never suffer in my household when it comes to food and we always eat low carb and healthy. Here's my first recipe:
Low Carb Steak and Cheese:
what you need:
romaine lettuce hearts
pre-grilled steak(any cut of meat)
shredded or sliced cheese
mayo if desired
about 5 minutes to assemble

1. rip off one romaine leaf heart
2. slice meat thinly or grind in mini chopper the desired amount of meat. I use about the volume 2 hotdogs would take up. Lay meat on microwavable plate in a 6x2-3inch rectangle.
3. cover with cheese & melt in microwave
4. use knife and slide melted mixture onto the romaine leaf.
5. add mayo if desired.
6. wrap with wax paper, aluminum foil, or just a napkin to catch crumbs.

This way you don't have any bread/carbs and you get the crunch and coolness from the lettuce. enjoy!

open top mini burgers. make your cheeseburgers low carb

I like creating a new twist on old recipes. One of Chris's favorites is the mini burgers. We eat a lot of meat, very little bread. To make a quick and low carb anytime meal you need:
- get a baguette from the store for $1.99 in the bakery and get a small diameter one, not a big thick breaddy loaf.
- your favorite hamburg meat
- a little bit of ketchup or condiment to make tastier
- lettuce/tomato if you like that..
-5 minutes from start to finish

Cut slices really thin (cut straight cuts for tiny burgers, on an angle for a little bit bigger burgers) like 1cm or sometimes even thinner if you want to be super low carb.

toast the bread just a little to make firm. I like toasting both sides for just a minute. don't burn it.

make tiny hamburger paddies (I make mine in a pan but you can grill them if you have time)

put shredded or sliced cheese on top to melt while the pan is hot if you want "cheeseburgers"

use a thin slice of tomato and a small piece of lettuce

*you can make "open top" and eat brochetta style to cut your bread carbs in 1/2. That's what I like to do.

If you must have a lid, put the toasted thin lid on and secure with a pretty toothpick:)

I make about 6 per person. They always disappear fast.

and for a side, instead of chips, check out the healthy section of publix where they have a 4gram chip alternative. There are snack peas in caesar flavor that are addictive. even the dogs like them!

I've got a ton of recipes I love. If you want me to post more I gladly will. Its kind of fund for me. I was just immediately lectured about needing carbs after posting this first recipe..we all know enough carbs get eaten by accident to have enough in your diet..or atleast that holds true for me. I just felt like I was treading on someone else's territory and I'm here for fun not stress so that was my first and only post. I've got lots of ideas. I'll think up a few for you. Nobody has ever complained about me feeding them.
