This is probably better posted in the recipe forum, Sweetie, but I'll throw ya a basic recipe for good beef stew. :)
Nothing I cook is precise so I'm really not certain on some of the quantities. ;)

1 1/2 - 2 lbs stew meat
water
potatoes
celery onion
Basically whatever other veggies you like :)
salt and pepper
beef boullion
1tbs cornstarch

Grab a big stock pot and brown off the meat in a little oil over HIGH heat. Drain the fat and cover the meat with just enough water to cover it. Turn heat to low. I add a bay leaf here but it's just personal preferrence. Salt and pepper. Cover and cook over low heat for about 4 hours checking occasionally on the water level. Add two cubes beef boullion.

Peel and cut up your veggies and add to pot. Turn heat back up to bring to a boil. Cook until veggies are done, approx 30 minutes.

Take about a quarter cup of the cooking liquid aside in a cup. Stir in the cornstarch till disolved. Return to pot and stir till the mixture thickens. May need to add more depending on how much fluid you've added.

Best thing to remember is that cooking is not an exact science. Add or remove veggies and spices to suit your preference. :)
