Turkey Bolognese for Pasta

1 tsp olive oil
1 medium onion - medium chop
2 -3 cloves of garlic- crushed
1.5 lbs of lowfat ground turkey
1 large can chopped tomatoes
1 can lowfat beef stock
1 cup red wine
1/2 cup port
basil
pepper to taste

Saute onions and garlic in olive oil in a large nonstick fry pan.

When onions are soft, add ground turkey, stirring to break up pieces. [don't try to brown it- it won't happen] and cook till no raw meat shows.

Add tomatoes, beef stock, red wine and port, let simmer uncovered till reduced by half (about 10 minutes). [If needed, added tomatoes paste (a teaspoon at a time) to thicken, alternatively, add bread crumbs or broken up day old italian bread to thicken].

Add basil and pepper to taste.

Cover, lower the heat and let simmer as you cook the pasta.

The red wine, port and beefstock keepthis sauce from tasting like health food!
