why would potatoes be a bad choice again? potatos are a complex carb. your meal seems fine to me.. Also, theres no way to tell if the meal was "large" without specifying a quantity... not to say that large meals are bad. Look up intermittent fasting..
lol insulin this insulin that... in the end its calories in calories out.. if you lift heavy you arn't gonna lose too much muscle... obviously if your strength is tapering off.. you may have too large of a deficit.
