Anabolic or not

If your weight is going up, you are in an anabolic state. Down, catabolic. Basically.

This is by no means scientifically proven but when you have been training long enough and dieted and bulked enough you get to know the feeling via your energy levels... I personally have a pretty good idea but I can't prove it....

currently I have a calorie counter watch that measures my heart rate and works out the calories I have burned, this makes things a little more science and less guess work, this is of course assuming the watch is accurate.....

If you have enough nitrogen in your system (ie. eating protein frequently enough) you will be in an anabolic state. When you urinate, check for bubbles. Bubbles (froth) usually indicates proteinurea, indicating a positive nitrogen balance.
