Here is a recipe for Banana Protein Muffins. These are really good and most people won’t even know that it is actually healthy. These are definitely my favorite healthy dessert/snack.
Banana Protein Muffins
1 cup oat flour or almond flour (if you have a hard time finding it you can just grind up quick cooking oats to a fine powder)
2 tsp cinnamon
½ tsp baking soda
¼ tsp salt
1/8 tsp ground nutmeg
4 egg whites
¾ cup Stevia or Splenda (I prefer Stevia)
½ cup fat free or part skim ricotta cheese
10 oz. of organic banana baby food. I look for the one with the lowest sugar content
2 scoops vanilla whey protein (I like Dymatize Iso-100 whey)
Directions:
Preheat oven to 350 degrees. Fill muffin tray with muffin papers.
In a large bowl, combine flour, cinnamon, baking soda, salt, nutmeg and protein powder.
In a medium bowl, mix egg whites, Splenda/Stevia, ricotta and baby food until well combined. Add the wet ingredients to the flour mixture and mix well. Pour batter evenly into the muffin molds leaving room for it to rise during baking. Bake for approximately 25-28 minutes or until toothpick comes out clean. Makes approximately 8 muffins.
