Help with my Diet while Blasting

I take 200mg Test per week for testosterone replacement therapy (TRT). I have some extra so I am doubling that for the month of Oct and Nov. I am used trying to eat healthy to lose weight. To me...healthier is not a lot clean food. I am 6'5" and 270 with 26.5 BF. Last year this time I weighed about 310-320. So here I am at the end of October and I am not "feeling it" like I did at the beginning of October when I jumped up to 400mg (200 Wed and 200 Sun). I have noticed some strength gains but I am thinking I should be seeing more. Here is what I ate today:

Breakfast - 1
Great Value - Oatmeal Old Fashioned, 1/2 cup dry
Coffee - Brewed from grounds, 2 cup (8 fl oz)
Great Value - Liquid Egg Whites *, 69 g 38
Great Value - 100% Pure Pumpkin *, 120 g
Body Fortress Super Advanced - Creatine High Performance Fruit Punch Drink, 1 scoop

Breakfast - 2
Topo Chico - Mineral Water 20oz, 2 cup
Generic - Steamed Brocoli, 3 oz
Body Fortress - Super Advanced Whey Isolate - Vanilla Creme, 2 scoop (35g)
Grilled Fish- - Ono (Wahoo), 4 oz. cooked

Lunch -1
Grilled Fish- - Ono (Wahoo), 4 oz. cooked
Day Break - Celery Sticks, 2 Sticks
Smucker's - Natural Peanut Butter- Crunchy *, 2 Tbsp (32g)

Lunch -2
Orchard Fresh - Walnuts - Halves & Pieces, 1 oz
Great Value - Beef Jerky - Original- 97% Fat Free, 1 oz

Dinner -1
Grilled Fish- - Ono (Wahoo), 4 oz. cooked
Generic - Steamed Brocoli, 3 oz

Dinner -2
Breakstone's - 30% Less Sodium 2% Milkfat Cottage Cheese, 1/2 c (124g)
Body Fortress - Super Advanced Whey Isolate - Vanilla Creme, 1 scoop (35g)

Calories Carbs Fat Protein Sodium Sugar
Totals 1,888 103 81 233 1,922 47


From what I have been reading...I seriously need to up my calories. I normally try to eat about 300 grams of protein.

Do I seriously need to eat about double what I ate today to make some noticeable gains for the month of Nov? Would I gain muscle and not get fat again?
