Buffalo Burgers

12 ounce buffalo ground

stuff cut cayenne pepper in the meat patty before you cook

cook medium rare in olive oil, spritz of lemon

top it off with some shredded mozzerela last minute of cooking

put the patty on soft wheat roll with some chipolte and roasted rep pepper and spinach

Some zucchinni and squash on the side with a glass of milk. Makes a nice little power meal.

Im fortunate to live near a bison farm if you dont these guys sell great buffalo and elk

I just had some buff burgers a few days ago.

I mixed in cayenne pepper, dill, oregano, salt, black pepper, and some worcestershire sauce.

Came out great!
 
Those prices are crazy expensive. I'm sure its super good and all, but wow!

I usually get my ground buff for 2.99 per 1lbs.

cheapest around here is 7.99/lb

and elk is super hard to find, i moved from Canada to south U.S.A last year... great weather, but not much elk meat :)

It is usually 6-8/lb, but I always find it in the almost ready to throw out pile for 2.99/lb and freeze it.
 
I have never tried cayenne pepper in my buffalo. It sounds sooooo good that im doing the tomorrow since its too late now. By the way i live in Canada and in the surrounding area we have 2 buffalo farms and elk. Bulking is so much fun!
 
Had some tatonka meat the other day and have to say is one of my favs. Cost $9 lb here.
 
These are really good with a pack of Lipton onion soup mixed in with the meat. I have also mixed in a pack of the Hidden valley ranch salad dressing mix with great tasting results.
 
Do you guys usually find Buffalo in normal grocery stores? In Chicago the only place I have seen it is the "whole foods" yuppie grocery stores and everything in there is ridiculous. They sell 27/lb salmon...
 
Buffalo burgers are the shit. Not a lot of it down here, but Gecko's has a mean Buff burger fosho.

Yep normal stores.

Its been awhile since I've seen below $6/lb. Its never on sale though, only cheap when it's about to go bad.

I dont mind paying a little more every now and again for something I dont have often.

There is actually a meet store on the south side of Chicago that has been there for like 23 years and supposedly they have been shut down like 5 times for selling illegal meat. I guess you can get everything from ostrich, turtle, etc and its all fresh? Somehow they keep opening back up. I guess everything about them is legit besides the fact that you can get fillets of half the animals on the endangered species list .
