I'm currently on a 3J diet and lovin it. One of my sides is Red Kidney beans....I messed around with them came up with this....
1lb of Raw Red Kidney Beans
1 small red onion
6 cloves of garlic (less if you don't like garlic)
1 Large pickle...sweet or any type
salt, pepper and red pepper flakes to taste
4tb of EVOO
1. Soak beans overnight in a bowl of water (or for at least 8 hours) then drain
2. Boil a large pot of water...add beans and lower heat to a rolling boil for 1 hour
3. In meantime, very finely chop the garlic, red onion and pickle.
4. Drain beans and let cool. Once cool, add EVOO, garlic, red onion, pickle, salt, pepper and red pepper
5. refridgerate over night...store in big tupperware and you have a cold red bean salad side for the week.
Top with some fresh grated parmesan cheese!
