The more you process it, the more you shift the GI, same with cooking time. The softer you make a food the higher the GI will become.
Not sure, but I would like to extend the question to maltodextrin. I have read about a disgestion-resistant maltodextrin and All The Why (misspelled on purpose or else this link doesn't work) even uses it in their (previously low carb?) If anything it "should" lower the Gi since your mixing it with protein, or flax, or whatever else is in the shake.
