easy meal

i was wondering if anyone had a recipe for a meal that i could just make in bulk. that will be healthy and i don't have to worry about cooking throughout the week. long hrs at work make eating healthy a lil more difficult and shakes can only go so far.
 
I would do a stirfry. Take 10-12 chicken breasts, tons of veggies....broccoli, mushrooms, onions, peppers, etc. Take some olive oil and cook all of that in a wok. You can add flavor like light soya sauce or whatever you prefer. Cook a big batch of rice, add together and voila. Portion up and there you go.

the easiest thing u can do is take a buncha some sort of lean meat.. season it.. and throw it in the oven... i do this twice a week for my meals... then u can buy sweet potatoes and yams and just throw one in the microwave for 6 min every time u need it.. easy meals...
 
Chili is a good one, You can control the macros by adding or substituting stuff. I like using... Lean ground turkey or chicken, low sodium chili tomotoes, squash, zucchini, spinach and whatever beans you like. Easy and you can make tons and freeze it.

that sounds good.. could you pm me the exact recepie??? im not the best of cooks but i can follow directions..
 
2 pounds ground turkey/chicken
1 3/4 cups chicken stock
1 small bunch scallions (five or six) chopped
4 ribs of celery - diced fine
1/4 cup red bell pepper - diced
1 clove of garlic -chopped
salt and pepper to taste
1/2 cup butter ( I use like 3tbls evoo and 2tbls smart balance)
1 teaspoom cumin
1 tablespoon chili powder (or to taste)
1 can (10 oz.) can diced tomatoes with chilis (I use Rotel brand)
1 cup water

You can use whatever vegetables you want, I use squash and zucchini for low carb and add beans (kidney and great northern) when I want more carbs. You can also add hot sauce if you want it spicy.

Sauté the scallions, celery, and bell pepper in the butter. Add meat and cook just until the color begins to turn. Combine the chicken stock, canned tomatoes, water, garlic, cumin and chili powder in a big pot with lid and add the chicken and any vegetables your using. Stir once to blend. Cover and cook on low for 45mins - 1hour. Just taste it youll know when its done.

Boom! done!

thanx for all of ur help. they all sound good. the hardest part now is of course choosing which one to make. thanx again
