How to work vitamins and minerals in with your diet?

I think the diet is the hardest part of me going on a cycle. I get so tired of eating and I'm never hungry. Anyways I'm real big on eating 5 to 6 times a day and packing on the carbs and proteins. I also drink protein shakes; preferably cytogainer and upyourmass in between meals. However I feel I lack some of the crucial vitamins and minerals that I need. I do take a multivitamin once a day, I don't know if that cuts it or not. Whats yalls way of getting the proper nutrients besides just protein and carbs, thanks.
