need more vegetables, advice?

i have reviewed my diet and i find i am too high in carbs and too low in vegetables. so the solution would be to replace some carbs like rice or bread, with vegetables. do you have advice as to some way to prepare vegetables or which ones to eat...i dont much like veggies but i dont dislike any in particular :(
 
steamed broccoli would be a good choice because it's full of vitamins and quite fibrous. it only takes a few mins to cook in the micro - cover a dish and cook for a couple of mins in about 1-2 Tbsp of water!

Stewing vegetables either in a stew with your beef or

boiled slowly with a stock cube for an hour till soft, then put in a blender to make savoury veg sauce (this takes time to make but is fantastic) You can even add beef to make it taste better but a cooking time of 2-3 hours is best to alow the beef to tenderise and disintegrate
 
Basically any vegetables you like, preferably very green. I like broccoli, spinach, green leaf lettuce, sprouts, and baby carrots (not very many carrots when I'm cutting as they do contain a fair amount of simple sugars). Raw plain, raw with some olive oil-based dressing, steamed, boiled (but drink the broth), and cooked in a wok with a small amount of olive oil are the ways I like them.
 
yeah definetely you never want to micro your veggies. All the nutrients go to shit when you nuke 'em. I put mine in a wok with some lean beef or chicken and yes Injectyourspinach always drink the broth because the heat makes the veggies lose there nutrients and they are all floating in the water that comes out after the cookign is done so you either want to drink it or sop it up with some bread. if you want a steamer, i really suggest you purchase a double decker one because you can cook entire meals (rice, meat, veggies) all at the same time and not have to watch them either! when it dings it's done! the only trick is to put the longest cooking thing on the bottom and then add stuff as the time progresses so they finish together.

i highly recommend it! meat is VERY tender after being cooked this way!

and not hare to clean
use pam cooking spray!

aren't they just the best?!

as for asparagus, i LOVE that stuff and you should def eat it, but technically broccoli is the near perfect food...
 
I either steam my veggies, or else slightly grill them in a lil pam and/or olive oil.
broccoli, spinach, rom lettuce, sprouts, mushrooms, peppers, onions.. :)
