Thinking about changing workout, suggestions comments?

I have been training each muscle once a week for many years now. I do a 4 day split. I usually do about 3-4 exercises per muscle and 3-4 sets per exercise. Average is usually around 10-11 sets per muscle. I've gained a little size in the past few years but nowhere near as much as I'd like. I did a cycle, gained a little bit of size but lost just about all of the size in a very short time after I stopped. I'm 23, 6'4" 235 and I eat a lot, usually getting in around 250g of protein a day. I don't count carbs or fat.

Anyway, I'm thinking of changing to a 2 day split but doing less volume each time. Maybe Monday and Thursday do chest, tri's, and shoulders and Tuesday and Friday do legs, back, and bi's but just doing 2-3 exercises each time and only 2 sets per exercise. Has anyone else done this and what were your results like? I'm just running stale and looking for a jump start to start growing again.
