What are the top 3 exercises for each of those parts for SHEER MASS and why??

Close grip chins, hammer curls, bb curls
Dips, close grip bench, skullcrushers
Squats, Leg Press, reverse lunges
Deadlift, bb row, weighted pullups
Dips, flat bb bench, incline db bench
Standing military press, upright rows
 
Now just FYI - some of these I already do, I am just trying to optimize and it's time for new exercises for my muscles.

You mean its not rocket science? Well damnit, all those years and years of stacked up Muscle and Fiction magazines all for naught.
 
I personally would include some type of pulling movement for the back, like chins or rows or something. Some say chinups are the squat of the upper body.

actually just about every one of these suggestions are very good . do heavy squats,bench,deads as your core wok and add in some of the rest to polish up and you should get good results :)
 
bench inclines, weighted dips dumbell lying extensions, military press shrugs, deads rows gm's, squats sldl's, barbell curls hammer curls.

Any part of the back I am missing? Does this look good?

I am revamping my workout and my first change was bi/chest day. By following these suggestions, I am very sore in new spots. My body has gotten accustomed to my regular routine.

back day, deads 2 sets of 3-5. bent rows 2 sets of 5-8, close grip pulldowns 2 sets of 8-10. Warmups not included, if you can break your ass on these six sets, you don't need anything else.
 
OK cool...but
Where do the traps fall??
This doesn't seem like alot because the back has many muscles
