Baked Salmon with pesto

Start to finish (40 min) oven 400 F

Recipe for Pesto Sauce:

In a food processor combine 1 cup of fresh basil leaves,
2 cups fresh spinach leaves,
2/3 cup walnuts,
2/3 cup grated pamesan or Romano cheese
(I like Pamesan better)
1/2 cup of olive oil
4 cloves garlic, peeled and quartered
1/2 teaspoon salt
1/4 teaspoon fresh ground black
pepper

Cover and process until nearly smooth (makes 1 1/2 cups)


Salmon:

4 6-oz portions fresh or frozen salmon fillets
Salt
Ground black pepper
1 1/2 cup of Pesto


Preheat oven to 400 dgrees. Line a large baking sheet with foil.
Place salmon on foil-lined baking sheet.
Sprinkle lightly with salt and ground black pepper.
Cover Salmon with foil. Bake 15 to 20 min, or until fish flakes easilywhen tested with a fork. Remove Foil from Salmon, and spoon some of the Pesto sauce over fillets.


This is one of my favorite recipes, it's really good.

i did this with mahi just the other day, great stuff ... also u can flatten a chicken breast .. spread pesto over it and roll it up.. hold together with a toothpick and put it in the oven... delicious..!!!
