favorite pasta salad recipes

Anyone have any good pasta salad recipes. Im trying to bulk up and need food for work I can eat cold. Thanks.
 
a good clean summer pasta salad that I will make is whole wheat pasta, cherry tomatoes(sliced in half), broccoli, red onion, diced peppers , balsamic vinegarette and fat free cottage cheese. Mix together and enjoy!!
 
for seasonings I've had pasta salads with just an italian dressing(I think that's kind of greasy), but my favorite is using the 4 season's powdered dressing with a scoop of mayo or miracle whip. I also like adding thin cucumber to my salad..the crunch is nice. You could really get creative and cut up small cubes of bbq meat--like chicken--that you would have grilled the night before and chilled in the fridge. that would be really yummy.
 
I love the pasta and its recipes. Any buddy wants summer pasta recipes?...

1 lb spiral or penne pasta
1/2 c uncooked red kidney beans* OR 15 oz can cooked beans - drain & rinse well
1 cup sliced green beans
1/2 red or green pepper, sliced in thin strips
1 Tbsp olive oil
1/2 c uncooked garbanzo beans* OR 15 oz can cooked beans - drain & rinse well
If you want to cook your own beans, see the directions below
2 celery stalks, trimmed & sliced thin on the diagonal
2 small carrots peeled and sliced thin on the diagonal
1 Tbsp minced fresh ginger
2 cloves garlic, minced
1/4 c minced fresh parsley
1/2 cup pitted greek or regular olives
Lacto-Veg Option: 1/4 - 1/2 c. diced feta cheese
 
^^^^Damn thats a huge amount of pasta salad, But it sounds damn good, minus all the beans, I dont like beans in my pasta salad
 
SPANISH PASTA SALAD
4 cups cooked colorful macaroni
1 cup red onion, chopped
1-1/2 cups salsa, separated
2 cups tomato
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
1 cup cooked black or red beans
1 cup cooked com
1 Tbsp. cilantro
 
Avocado, Tomato and Mozzarella Pasta Salad by Tarla Dalal

A stylish summer salad made from ingredients representing the three colours of the Italian flag - a sunny cheerful dish!

Ingredients

1 ripe avocado, sliced
1 tsp lemon juice
3 large tomatoes, thinly sliced
1 1/2 cups How to Cook Pasta
1 cup mozzarella cheese , cut into thin slices
2 tbsp chopped walnuts (akhrot)

To be mixed into a dressing
3 tbsp olive oil or oil
1 1/2 tbsp lemon juice
1/4 tsp mustard powder
2 tbsp chopped fresh basil
1/4 tsp sugar
salt and freshly ground black pepper (kalimirch) powder to taste

Method


1. Apply the lemon juice to the avocado slices to prevent them from discoloring.
2. Combine all the ingredients of the salad in a serving bowl, add the dressing and toss well.
3. Cover and refrigerate for about 2 hours.
4. Serve chilled.
 
in my opinion... italian pasta salad is the best.
even tho it is very oily and fatty. I LOVE IT! make pasta. with roughly a lb of pepperoni. a can of black olives. chop up a green pepper. chop up roughly 3 tomatoes, get roughly 1/2 lb of banana peppers. and maybe 1/4 lb of pepperchini's. a little sprinkle of lemon pepper. make alot of noodles tho if your going this route. its alot of food. but.... i can finish roughly 5lbs of it inside of 2-3 days.
 
This pasta salad is reeeeally good.
Mexican Chicken Pasta Salad

Takes about 10 min.

1/2 lb. rotini or other spiral pasta
1 lb. roasted chicken meat, shredded
2 tomatoes, seeded and diced
1-1/2 cups frozen corn, thawed
1-1/3 cups fresh carrots, shredded
1/4 cup red onion, chopped
1 Tbs. Dijon mustard
1 Tbs. lime juice
1 Tbs. jalapeño pepper, seeded and minced
3/4 tsp. chili powder
3/4 tsp. ground cumin
1 cup fresh cilantro, chopped

Cook pasta in boiling salted water 8-10 minutes, or until al dente. Drain and transfer pasta to a large bowl. Add next 5 ingredients and toss. Combine remaining ingredients,except cilantro, in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over pasta. Add fresh cilantro and toss thoroughly. Season with salt and pepper to taste.

This is a good pasta to eat cold.

chicken filled tortellini
fresh baby spinach
fat free feta
diced peppers
boiled chicken breast
fat free/reduced fat pesto

you put the baby spinach down first, tortellini mixed in pesto on top of that, then the chicken slices, followed by the peppers layers, then crumble on some fat free feta. its AMAZING.
