This is a quick recipe, but oh so tasty. I made it tonight.
You need:
1.5 lbs boneless, skinless chicken breast
1/4 cup olive oil
3 cloves garlic, minced
1/4 cup bread crumbs
1/4 cup grated parmesan cheese
Preheat over to 425
-Combine olive oil and garlic in shallow bowl and warm it (I microwave it for 45 seconds)
-Combine breadcrumbs and parmesan in bowl. Mix together.
-Dip chicken breasts in olive oil, lightly coating both sides.
-Dip chicken breasts in breadcrumb/parmesan mix, coating both sides
Place in baking pan and bake for 40 minutes or until chicken is cooked.
The recipe also works well with mozzarella, although the mozzarella tends to turn a much darker brown than the parmesan. The only real unhealthy thing about this is the breadcrumbs, but with 1/4 cup in the entire recipe, it's not that bad.
