Here's a great bulking recipe for the holidays.

Egg nog--get massive recipe

4 eggs
2 cups whole milk
real vanilla extract-I like the stuff from Mexico
nutmeg
cinnamon
1/2 teaspoon of brown sugar
3 ice cubes

separate the yolks from the whites of all 4 eggs, keep yolks
beat whites with 1/2 teaspoon of brown sugar and 2 tablespoons of vanilla

Put milk in blender with icecubes, a pinch of nutmeg and a pinch of cinnamon, add tablespoon of vanilla and yolks to blending mixture

Add beaten whites to the blending mixture

Serve ice cold
 
I make my eggnog with eggbeaters,,,,,,they are pasturized and you don't have to separate the whites from the yolks.
 
I don't understand the point of seperating the eggs, only to put them back together in the blender. Can anyone explain?

I was just now investigating the egg yolk/white seperation this when I came across this:

Raw eggs: People ask about the raw eggs in the eggnog. My grandfather always said that the alcohol "cures" the eggs although I'm not sure that's true. I tried pasteurized eggs in 2004 and they do not work. They didn't separate well and the whites did not froth up at all. The FDA says that in unpasteurized eggs, one in 20000 contain bad bacteria. I can tell you is that I have made (and drunk) at least 50 batches and have never felt ill or had one of my guests feel bad. I usually buy the eggs just before I made the eggnog and keep them well refrigerated. I try to smell the egg when I crack it open and although I have never gotten a bad egg over the years I did get bad cream.

if you have ever tried to mix any ingredients into egg whites you would be amazed at how hard it is to get them to seperate. the whites are not "evenly thick" and tend to leave your other ingredients in clumps. if one adds the egg whites to an already blended mix, the the mix is much more uniform.

the purpose of this is to get the fluffy consistecy from the eggwhites before putting into mixture so you get that nice smooth rich egg nogg....... :druggie:
 
I've made a small adjustment to my version of the recipe.

- Use 1 cup of milk instead of two

For more eggnog, double the recipe.

Okay, I also add a bunch of splenda and skip the brown sugar.

The low carb eggnog I purchase (brand: Hood) was pretty good, too.
 
Bump. This shit is good. I'm gonna have to start buying eggs by the crate.

Using skim milk, actually. I guess I've deviated a good bit from the original posted recipe, and I just throw all of this into the blender:

1 cup of milk
4 eggs - I don't seperate them because I can't tell the difference
Nutmeg - I like it, so I give it a good few shakes
Cinnimon - just a shake
Vanilla - I just pour a bit in
Ice Cubes - suck when they jump out of the blender
Splenda

Makes enough for two large glasses.
 
i used mranak's recipe this mornin', only instead of milk, i used vanilla soy milk. it was good. I'd recommend for anyone who's not big on milk, or lactos-intollerant. i would imagine the rice milk would be very good also.
