Near the end of my leg workout I was half way through my hamstrings workout and everytime I bent down(either legs bent or straight) to change the weight on the machine, my hams would cramp up.

Make sure to warm the whole leg up. Try doing calves before hamys, and do some bodyweight sqauts before you start ham work to get some blood flo. Along with a WU
