300lbs of Heavenly Joy
Here is one of my favorite meals--high protein, lots of veggies
3 cups shrimp deveined and shelled
3 chicken breast fillets--cut into bite sized pieces
2lb of steak cut up in 1 inch strips
3 eggs scrambled
2 carrots thinly sliced
1 head of bok choy-chopped
1 red pepper
1 green pepper----chop both peppers
snow peas
1 large handful of spinach
1 teaspoon indian hot curry powder
1 teaspoon of sesame oil
1/2 cup of peanut oil
1 large handful of peanuts-honey roasted preferred
soy sauce to taste
Cook shrimp, chicken and beef in peanut oil--large skillet or wok
remove shrimp chicken and beef and put into separate bowl -keeping the oil in the pan
Use oil to cook vegetables add some curry sesame oil and 1/4 cup of water let veggies steam--covered
remove veggies and any liquid in wok--put into separate bowl
add a bit more oil to wok --cook scrambled eggs
When finished add meat--then add veggies let cook for a couple of minutes---This is awesome
Top with honey roasted peanuts when serving.
