not taking in hardly any carbs, the few i may get are complex, but thats not even daily. no sugars at all. the worst part of my deit is coke zero

It can take up to 2 wks to see weight lose. Don't use the scale everyday u'll drive yourself craze.

Cardio that is short - often & intense is better than long.

Your carbs are good.

Give it time and log everything you eat.

Your weight today is from last week.

I agree with that! Dont even bother with the scale. Maybe once a week. It will just take time. When I started back, I gained about 10 pounds of water weight the first two weeks. After that, my body was no longer in shock and I started to slowely cut down. Time is key. I think your in a rush for results bro. Just keep doing what your doing, keep your head right and you will cut down before you know it.
