Looking for interesting Sweet Potato Recipes

Anyone got some interesting recipes for sweet potatoes???

not really a recipe, but........

i eat mine with honey and cinnamon

i cut mine into cubes and put em in a pan with olive oil. Brown em until crispy.. taste like those taters... i eat it with rice.

I just bake mine in the oven. They have so much natural sweetness they really don't need any adornment.

Cinamon IS good on mashed sweet potato though.
