M&F's: Spicy Chicken Chili

From the vault of Muscle and Fitness (7/02) this is one of my favorite dishes to make.
Spicy Chicken Chili!

What your going to need:
1-2lbs of thawed skinless Chicken breast
1 can (14oz) Diced Tomatos salsa style or what ever flavor you like
1 can (15oz) Spicy Chili Bean (Joan of Arc work great)
6oz fat-free shredded Chedder Cheese

Here's what you do:
1 - Chop skinless chicken breast into 1" cubes or bite size strips.
2 - Cook 3-5 min over med-high head in a nonstick 10" or 12" skillet sprayed with cooking spray. Carefull not to over cook chicken here.
3 - Drain off fat if you like then mix in can of Tomatos undrained.
4 - Mix in can of Spicy Chili Beans, reduce to med-low heat.
5 - Cook uncovered 8-10min stirring frequently untill Chicken is no longer pink in center.
6 - Serve topped with fat-free shredded chedder cheese.

Specs: based on a 4 servings and 1lb of chicken
250 calories, 37g protein, 26g carbs, 1g fat

I've cooked this countless times normally doubling the recipe so I have a weeks worth of left overs to eat. Add spices if too blaned or change up the flavor of the Tomatoes or Beans to suit your tastes. But this is super simple, quick and easy to make and it tastes awesome!!!
