new 5 minute chocolate fix

Over the w/e I made a low carb chocolate treat. I expected it to be nearly inedible...surprisingly it wasn't half bad. Here's my quick recipe:

2 egg whites whipped stiff
1 pinch of spenda
1 T of protein powder
1T of unsweetened baking cocoa

*mix quick..just until all ingredients are mixed. Bake @350 for about 10 min. (honestly, I think I'm going to spray a pan and try to make it like a pancake next time)

to make it enjoyable, I took 1/4 cup of heavy cream and whipped it..added a little splenda and topped off my choco treat with my whip cream. I'd give it a B. Cream was yummy & chocolate taste was good:)
 
Mini Ice Cream Sandwiches:

Did you know the lowest carb count for chocolate chip ice cream (that I have found) is typically from the no name brand in the 1/2 gallon cardboard box. I go to publix and found a box with about 12g carbs per serving.

I like chocolate for my snack, so I've come up with a very satisfying bite size treat that won't mess up all your dieting and hard work:

Get a box of Dark Chocolate wafers from the baking isle. These are the really thin, hard, nearly black 3 inch circles that come stacked up..Typically you have to pick through a few boxes because some jerk breaks them in half.

Buy a container of your favorite low carb ice cream. & remember, each treat will only be using about a tablespoon of ice cream.

Sandwich your ice cream between two wafers. Have aluminum foil ready to wrap these mini treats into position. Freeze until you are ready to eat them.

*I typically eat 2, but for a man, I typically serve 4 on a little plate. They are yummy and satisfying.

Damn that sounds pretty good, I'll have to try the top one though not quite sure how it sounds. I do have a soft spot for chocolate and may only get to eat it once a month due to dieting
 
yeah, the top one was 100% dreamed up..they weren't crispy and fluffy as I expected but still tasted decent if that's my only option. the fresh whip cream made it tolerable.

the ice cream sandwiches are a winner in my house..they are better than the store bought ones...and you control the carb amount by which ice cream you use. a nice mint chip or choc chip in a no name brand should give you the lowest carb options..
