Show me how to eat

Frosty, is it a myth about Egg yolks with all that cholesterol in it that is sooo bad for you?

Ive heard someone say before that only once the egg yolks are oxidized or wahtever, like turned solid from cooking, that the cholesterol becomes bad for you, but otherwise it isn't.....

Does that go the same for chicken breast cholesterol, or healthy meat cholesterol?

I am curious.

I've heard that about cooking the yolks, although just cooking it shouldn't really damage it. I think it's if you scramble them on high heat that you might damage the cholesterol. Even then, I really haven't seen enough to say that this really is bad. It's probably good practice not to burn your foods anyway :)

It's definitely a myth that egg yolks are bad for you. In fact, they're one of the healthiest foods you can possibly eat. Full of vitamins, minerals, and good fats (EPA and DHA). I personally think raw yolks are good and cook the whites. The raw yolk is to preserve the good fats and nutrients as much as possible. The cooked egg white is to make it more digestable as well as get rid of the avidin problem (which inhibits biotin uptake). Egg white omlets are cool and you can break the yolk over top of it when it's done. Either that or just eat it with a spoon :)

Meat is much MUCH less concentrated with cholesterol, so I really wouldn't worry about it at all.

YOu know, ive been throwing out most of my egg yolks...lol i guess that is bad huh?

Usually at one meal I will make 8 egg whites with 1 egg yolk.

I never even thought to hang onto a couple yolks and break them over top the egg whites. That is a killer idea. I will have to try it.

SHould i then since I am cutting, not eat too many egg yolks at a time because of the fat and calories from each one?

Ive heard that gettoing poisoned from raw eggs is really rare because there just isnt' enough of that in the egg to affect you. Just what ive heard though.

There is only a 1 in 30,000 chance that you will eat an egg containing salmonella when eating standard grocery store eggs [http://www.mercola.com/2002/nov/13/eggs.htm]. This means that every time you pick up an egg and eat it, there is a 1 in 30,000 chance that it contains some salmonella.

However, just because it contains salmonells does not mean that there is enough to make you sick. Your intestines naturally contain small amounts of salmonella, keep in mind. If there is enough to get you ill, it has to first pass through your stomach acid, then bypass the intestines (the bacteria in them is 60% of your immune system). Once it bypasses that, it then has to take over the rest of your immune system. So even if you do eat an egg that contains a good amount of salmonella, that does not mean you will get sick. If your immune system is compromised because of stress, poor diet, etc, then it would be more likely you could get sick from this, but again, the chances of that aren't very good.

Now eat organic eggs, and the chances are even lower.

Also keep in mind that you can get salmonella from produce as well. There was an outbreak of salmonella poisonings in my area from tomatoes from subway. There was also an outbreak of hepatitis from Chi Chi's green onions. So if you won't eat raw yolks because you're afraid of salmonella, then you should also rethink eating lots of produce as well.
