Squats and deadlifts CANNOT be replaced.IMO the deadlift is the best exercise in the book,start off light get the form perfected and slowly add more weight and you will thank me later.If I had to pick 1 exercise and one only to do at the gym it would be deadlifts they work the entire body.
From what I hear 1.5 grams per pound of body weight,but I manage fine on about 1 gram.Calories depend on your current weight and body fat level and what you are trying to accomplish,
I say heavy squats will make your legs grow more than anything.I tried the 5x5 for a while but the 10 + rep range works best for me.Also if you do it right you should not be able to do it more than once a week!!
I would train chest and all other muscles 1 time a week.May have to expriment with sets and reps as everyone is different.I stay at 9 to 12 sets per body part.Rep range anywhere from 4 to 6 to 10 to 12 change it up and also try throwing in dumbell presses works for alot of people I know.
