I love this recipe ! 
Ingredients:
1 cup of brown rice
2 cups of chicken broth
1 can black beans
1 onion sliced into strips
3 tbsp extra-virgin Olive oil
4 chicken breasts, cut into strips
1 pckg of taco seasoning
8 whole wheat flour tortillas
1 cup shredded lettuce
1 cup shredded cheese
1 fresh avocado, sliced
some fresh cilantro chopped
Cook rice, use chicken broth instead of water, heat beans on low heat.
Saute onion in olive oil on medium-low about 10 minutes.
Add chicken, cook on medium untill meat is cooked through.
for last 2 minutes, brown on high. Mix 2-3 tbsp taco seasoning with a little hot water, add to chicken. Simmer on low, 1 min, stirring until mixed.
Heat oven ti 250 degrees. Wrap tortillas in foil, bake them for 10-15 min before dinner to warm.
Makes 8 servings
