In fact, we can tell from my blood work that the gear is legit, but probaly underdosed. There is no way my total testosterone would have doubled just from training and eating properly.

You have your answer as you have bolded it yourself. What Mega is trying to explain to you is that there is a natural upswing with natural testosterone that can vary easily by up to 40% or more just based on what time of day you have the blood drawn. This does not include strenuous exercise, improper dieting, lack of sleep, or any recreational drug use at the time. Having a nil result for LH/FSH would indicate that without a doubt whether or not this was such the case.
I'm heavily leaning towards it just being watered down crap myself. Oddly, your results are about where I sit with 250mg/wk - which suggests that someone didn't get their ratios right when mixing the raws. I'd consider finding a new source.

Just thinking but assuming the test was fake but the AI (that should be run with a Test E cycle) is not fake...would there be a danger in crashing estrogen levels?

There are studies showing men with hypogonadism and taking AI's increase their testosterone levels. If the HPTA feedback loop is open, the decreased estradiol actually gets the body to increase testosterone production. In these studies, hypogonadal men were on about 1mg of arimidex daily. I don't know what effect this would have on someone with healthy testosterone levels.
