hi-fiber/protein banana walnut bread

well, i initaillay used a regulare recipe and i kept substittuting until i got it right.

bread:
2-3 mashed bananas, mashed
2 cup whole wheat flour
1 cup protein (i used MPI, but i've thought of using ON choc whey in my next batch)
heaping handful of walnuts
1 egg, beaten
5 tbsp splenda
1/4 baking raisins (extra moist), you can go to 1/2 cup if you want it sweet, but it is extra carbs
1/2 packet of dry yeast (1 tbsp)
1/4 cup water
1 tsp salt
2 tsp oil (use a healthy one: grapeseed, olive) (for extra moist bread, be very GENEROUS with the oil)
dash of cinanmin (if you like)

oat topping:
1/2 cup boiling water
1 cup oats

let oats and boiling water sit in a bowl.
spray a bread pan with non-stick cooking spray.
lay oats on the bottom, use fork to get even coverage.
mix bread ingredients relatively uniformly.
add to baking pan.
350 for 35-50 minutes, depending on oven.
slide out of bread pan onto a plate.
cut top flat, if rounded. we'll flip it over.
put back in pan, with oats on top.
let bake another few minutes, high heat to make the oats crusty.
enjoy.
