How do you east your eggs?

Not from the south but I have been cooking 2 whole jumbo eggs with 2 more jumbo whites and frying them just till the whites are white then mixing in with some quick grits / servings and add some tapatio and a little shredded cheese. Lots of black pepper also

i get the south western style egg whites, has chopped peppers in it, sooo good. 7 egg whites and one whole egg. SCRAMBLED.
