I Need Help

Here's the scoop, I'm 25 195lbs with a fairly high bf and haven't been at the gym in 2 years. Before I quit I had worked out 7 years and at my peak I was 224lb at about 14% so my question to all of you is... What kind of diet do I use to start (I want to lean out first) and how often will I have to change it once I start gaining my muscle back? Another question, how long should I wait before I start saucin again? Any help would be greatly appreciated cuz my diet is not my strong point. thanks

ps. muscle memory is a fact not a myth right? lol
