I lay on my side and do a side crunch type deal. I do one set each side for 15 reps, once a week, and I have obliques.

For external and internal obliques you are best performing twisting abdominal exercises. For instance, on a decline bench perform a crunch and touch your right shoulder to your left knee and vice versa.

I've always heard those are bad for the spine.
 
How about the machine where you can sit down, hold on to two handles and rotate your torso? I think that was designed to work your obliques.

No they are not bad for your spine. If you are worried about that then you could perform them lying on a mat. When you touch your right elbow to your left shoulder kick out your right leg for increased intensity, and vice versa.
 
attach a rope to a low pulley, stand so your side is facing the pulley. grab the rope with both hands and rotate your upper half. the motion is the same as swinging a baseball bat.
