Lean Turkey Chili
Hey man - here's one i like 'cause it's so easy and makes like 20 servings!
Lean gound turkey 2-4 lbs depending on how much protein u want. i go heavy on the meat - you can always dilute it w/ veggies if it's too meaty,
Brown the turkey in a fry pan or giant pot with 1/4C of oilve oil. after 5 mins add 2 big chopped white onions. make sure you get it to brown, almost burn - adds a lot of flavor. Onions should be translucsent - add more olive oil if you need to. (olive oil is a good fat)
Add 1T ancho Chili powder, 1T chili powder 1C chiken stock or water w/ a chicken boullion cube.
Add 2 drained, rinsed cans of kidney beans or black beans or a mix of each(your preference)add 2 small cans of diced green chilis.
Add 1 giant can chopped tomatoes (16 oz) add 3T tomato paste
stir well cut heat to low and cook for 1 hour. Taste & correct seasonings - if you like it spicy add more chili powder. i generally don't add salt 'cause the chicken broth has saly & I am trying to cut down on salt.... but you could add 1/2 t salt if you like. Black pepper too if you like (I don't)
When it's all done it has about 60% protein,30% carbs (beans & tomatoes) and 10% fat.
If you are trying to get a higher fat content, you can add up to 3/4C olive oil. Depends on your diet goals. i did the CKD diet and used less Tomatoes and beans (i can only) and added a cup of olive oil - made it very high in protein & fat. Also you can serve it w/ grated cheddar cheese.
freezes great easy to warm up at work or school and doesn't tatse bad at room temperature.
