so i love red potatoes... but if you just boil them and eat them they are bland as hell...
so i thought i would share a recipe that kicks ass while not adding too many calories to the potates..
here is what you need..
5 medium sized red potatos.. they should be about 5-6 ounces per...
3 cloves garlic.. finely chopped
1 tablespoons olive oil
1/4 cup grated parmesan cheese
1 tablespoon salt
Instructions...
put the potatoes in a pot... add water.. and let boil for 1 hour
remove potatoes and immediately place under cold water just enough to cool down the pot
start mashing the potatoes.. i use a old wine bottle to do this, do not remove the skin!
once the potatoes are half way mashed add the garlic, salt, olive oil, and parmesan cheese
keep mashing for another 4-5 min... once done mashing let the potatoes sit for about 10 min so the flavors can sink in...
tastes amazing.. enjoy!
