I do this all the time but with pita bread being the crust.

I love my carbs :)

the beauty of this is that the thinly sliced chicken breast is the crust, no bread in this bad boy.

That does look amazing, and might actually get me eating that dry ass breast instead of thighs again. Is that tomato paste/sauce, or another alternative? Probably going keto again soon, so I have to work around those little details. :agreed:

I used to feel that way about the boneless skinless breasts too. I got one of these GT Xpress 101s to save on electricity costs. It takes one minute to preheat then takes 20 minutes to cook the breasts. They come out juicy, tender, and uses probably less than a 1/4 of a regular oven. Not to mention the oven heating up the whole house. I cook salmon in 12 mins. and all kinds of other things comes with a cook book too. Have it set up right next to my rice cooker. You can get them on ebay for around 20 bucks free shipping.

thinly sliced chicken breast, sprinkle with seasoning, topped with marinara sauce and mozzarella cheese, bake until cheese starts to turn dark brown. serve with your favorite salad and Eat it like a BEAST!

I have something very similar, but it's just the lack of fat in breast that turns me off now. It's probably from eating so much of it over the years, I just need that little flavor from the fat - like that found in thighs.

Although, when it's supposed to be dry, like in a crust - I can totally see that working. Moist crusts are just icky; I found that out the hard way trying cauliflower as a carb substitute in pizza. :Puke:

absolutely! The fat brings out the delicious flavor of the beef, got to have it. I get so mad at my girlfriends who slice and dice all the fat away from their steaks and chicken, I gobble it up.

and about those cauliflower try preparing it like you would mashed potatoes, its so ridiculously good!
This recipe is definitely on my weekend menu!
