What steaks do you like

proscuitto is a ham that is cured with pepper and juniper berries--it should not be quite a salty as other hams but the American stuff is sadly too salty because the FDA does not allow air curing as they do in Italy. Italian prociutto is cured in the sea air and takes an entire month to cure, then it can be aged from anywhere to a couple of months to a couple of years. Cappicola, is another very good ham from Italy but is usually fairly expensive. A good steak should never be wrapped in bacon or proscuitto--it is an insult to the beef to cover it up with smoked pork. I like filet mignon but it is better to wrap it in beef fat than smoked meat--a steak should taste like a steak and only requires two things a bit of salt and some cracked black pepper.

Yes i have - I actually like prosciutto a little better because i can wrap it around chicken breasts with some mozerella cheese and asparagus.

Damn that sounds good.
