This is one of my favorite recipes and foods. It is called "Plov" it is a Russian recipe thats been in my family forever and in my culture for centuries. This is some exclusive shit so if u tell anyone, I will find u and have to kill u..... jk.
Just a headz up, this is an all day recipe, not something u decide to make last minute.
The ingredients you will need:
3 lbs Beef stew meat (I like lamb but not everybody else does.) cut into bite size pieces
3 cups long grain "Jasmine" white rice, steeped in water (jasmine has a unique scent and flavor that imo works best)
2 large onions sliced medium thin
10 carrots cut into matchsticks
3 heads of garlic with the tops cut off
1 tbs of cumin
1 tsp black peppercorns
salt to taste
Vegatable oil for frying ( NOT olive oil)
Cast iron pot "Kazan" (works best)
Plove cooks at very high temp, cast iron is a very good insulator.
In your iron pot, pour in about a 1/2" of oil and turn the heat up all the way.
It is important not to overcrowd your pot, you will get a lot of liquid from from the meat. In this case just pour out the liquid and save it for later. (this way the meat will brown better)
Once the meat has browned, ( 10 mins.) add the onions and saute for around 10-15mins untill the onions are brown.
Now, add in the carrots and saute for about 15 mins.
Now take the garlick cloves and peal off any loose skin and add them whole into the mixture. (nestle them in nicely)
Get boiling water and add it to the mix, just enough to cover the top of the mix.
Add in your salt and spices and turn the heat down low.
Now just chill and DO NOT TOUCH anything, dont stir just let it be for 45 mins. Go toke up or something. lol
After this time, get you rice thats been steeping this whole time and drain the water out of it. Carefully and slowly lay the rice over the delicious smelling mix. Spread it out evenly and again, pour BOILING water over everything, about 1/2" above the rice.
Let it coock on high heat untill there isn't any more bubbling liquid. Only when its completely dry, it is ready. Once it looks good and dry, turn off the heat and cover it with a lid for about 30 mins. DO NOT STIR untill this time passes!
Now go ahead and stir it, take out the garlic cloves and enjoy.
This is an awesome dish we make at like family events over an open fire. I know it's a pain in the ass to make soooooo, next best thing is just to make some Russian freinds. lol
