I have read that when you use oils such as olive oil or peanut oil that the high temperatures of a stovetop will cause a chemical reaction to take place in which all (most) of the omega 3's and 6's convert to omega 9's and become useless. Does the same thing happen when you bake with flax meal? I was wondering because I can make some killer whole grain bread and I was going to add some flax meal in it so that I can get my daily dosage of omega 3's that way, but if it converts when your baking I just dont want to waste it. Any insight would be helpfull.
