I definitely understand the difficulty of eating a lot of food. And it takes time for your body to adjust to the diet. First of all, if you aren't use to consuming that much protein, your body may not be absorbing it at and optimal level. Your body needs to build up digestive enzymes to help metabolize it, and I've heard it takes about 1-2 weeks (?: i don't know how reliable that is) for that to happen. Also, the more you try to eat, the more your metabolic rate is increased and eventually your body will get use to the amounts of food and consider that "normal."
This is just my opinion, but I would follow your diet as instructed, but take in a little less protein (about 75-80% if you can) at each meal, Then every a few days or a week, increase the amounts of protein slowly, until you are eating the full amounts given. For example, if your diet calls for 6 oz chicken + 0.5 cup of brown rice + 1 cup broccoli, try starting at 4 oz chicken +0.5 cup brown rice + 1 cup broccoli. Then after a few days try 5 oz, then in another few days try 6 oz. Or, instead of 1.5 scoops of protein powder, try 0.75, then 1 scoop, then 1.5 scoops. It is difficult, but give your body time. It'll catch up.
