A Few Recipes From a N00b :)

Hey guys,

Here are some of my kitchen adventures... I have a lot more (sushi, dolma, gumbo) utilizing ingredients known to be our friends in the "more muscle, less fat" journey. If you guys like these let me know so I can post more :)

ROASTED GARLIC CHICKEN AND MUSHROOM PURPLE RICE RISOTTO

Chicken:
300g Chicken Breast
Dehydrated Minced Garlic
1 Tablespoon Olive Oil
1 Lemon

Directions:
1- Place the raw chicken in a small container and squeeze the lemon.
2- Leave it marinating for about 10mins, while you preheat the oven at 375F (200C)
3- Place chicken breasts on a oven-safe tray and pour the table spoon of olive oil in between.
4- Shake tray so olive oil is spread.
5- Season with minced garlic and salt to your taste.
6- Roast chicken for about 20mins.
7- Flip chicken to get both sides crunchy.
8- Roast for another 20mins (or until desired crunchyness)

Risotto:
1 Cup Purple Rice - Partially Cooked
1/2 Cup of Fresh Mushrooms - Diced
1 Can Mushroom/Roasted Garlic Soup
1 Can Almond Milk
2 Tablespoons Dehydrated Minced Garlic
1 Tablespoon Olive Oil
Salt to taste

Directions:
1- Sautee the Minced Garlic in the Olive Oil.
2- Add the mushrooms. Sautee for 2-3 minutes
2- Add the can of soup and the can of almond milk.
3- Stir on moderate for 5 minutes
4- Add the partially cooked Rice and keep stirring on moderate for another 10 minutes.
5- Enjoy!

LEMONGRASS GINGER YELLOWFIN
6 Yellowfin Fillets
3 Lemons
10-12 Pickled Yellow Chili Peppers
1 Tablespoon Ground Black Pepper
1 Teaspoon Crushed Ginger
Fresh Lemongrass and Salt to taste

Directions:
1- Marinate the fish fillets in the lemon juice, pepper and ginger for 15 minutes
2- Preheat the Oven to 400F (200C)
3- Lay the fish fillets in an oven-safe tray, covered with aluminum foil
4- Cover fish with lemongrass, yellow chilis and a drizzle of olive oil
5- Bake the fish for approximately 20 minutes or until golden brown
6- Enjoy!

SPICY TURKEY MEATBALLS
300g Lean Ground Turkey 93% Lean
1 Lemon
1 Tablespoon Habanero Mustard
2 Tablespoons Minced Garlic
1 Teaspoon Olive Oil
Salt to taste

Directions:
1- Preheat the Oven to 450F
2- Mix the turkey, juice of 1/2 lemon and the mustard. Add the salt.
3- Pour the olive oil in your hands before rolling the meatballs
4- Sprinkle the minced garlic on the meatballs
5- Bake them for 20 minutes, flipping them over halfway.
6- Squeeze the other half of the lemon on top of your baked meatballs.
7- Enjoy!

Have a bomb recipe for dolma (stuffed grape leaves) and bbq chicken fried brown rice (stir fried on coconut oil)
 
Hey guys, as promised here are some more :)

SCHEZWAN SPICY FRIED RICE

300g Lean Steak (Top Sirloin is my favorite)
Dehydrated Minced Garlic
1 TableSpoon Coconut Oil
1 Yellow Onion
1 Green Pepper
1 Red Pepper
2 Cups Cooked Brown Rice
1/2 Cup Soy Sauce
1/2 Sri Racha Sauce (Or other Chili Sauce of your preference. I like my stuff spicy, you might want to adjust this quantity depending on taste)
1/2 Lemon

Directions:
1- Dice the beef in strips (About 1/4 inch thick) and squeeze the lemon.
2- Leave it marinating for about 10mins
3- Meanwhile heat up the coconut oil and sautee the minced garlic and diced onion
4- When the onion and garlic are about to be golden, add the beef and keep stirring.
5- After you stir fry the beef to desired cooking add the soy sauce.
6- Cooked it covered for about 10mins, stirring occasionally.
7- Add the Spicy Sauce and keep stirring.
8- Add the Brown Rice and keep mixing until spicy sauce is mixed throughout.
9- Add the diced peppers and cook it covered for approximately 5 mins (or more if you don't like the crunchy texture).
10- Add Salt to Taste.

This yields 2 servings.

DOLMAS (STUFFED GRAPE LEAVES)
300g Ground Beef (90/10)
3 Lemons
2 Cups Cooked Brown Rice
1 Yellow Onion
1/4 Cup Dehydrated Minced Garlic
1 Tablespoon Ground Sumac (Found in most middle eastern stores or online)
1 Tablespoon Cumin
1 Teaspoon Ground Black Pepper
1 Teaspoon Crushed Ginger (Dehydrated also works)
Pickled Grape Leaves (Found in most grocery stores or online)

Directions:
1- Cook the Brown Rice.
2- Season the Ground Beef with the Spices, Garlic, Lemon Juice and Diced Onion. Mash it all together with your hands.
3- Add the Rice and Salt to taste, and keeping mashing it until you have all the ingredients mixed and nicely stuck together.
4- Grab a large plate and place a grape leave, shiny side down.
5- Stuff the grape leaf with a small oval shaped portion of rice/beef.
6- Roll the stuffed grape leaves into a cigar shape. (There are several instructional videos on Youtube, it's easy after you've watched it!)
7- Place the stuffed grape leaves into a pan filled with water and cook it on High for about 15-20min (or to your desired meat cooking point)
8- Remove the Dolmas and place them in a plate, squeezing lemon juice on top.
9- Pro Tip: Add some cloves to the water, they add a great touch.

Dolmas can be eaten hot or cold (I prefer the second ;))

This Yields 2 Servings.
