You stated it in your response -electrolytes(salt). Enzymes could also be a factor due to some people lacking various ones like: lactose, amylase, etc...
When you lack enzymes you become bloated/gassy.
**But we're talking fat/muscle not cosmetics.
I guess from my personal experience when I see people saying "Oh I do IIFYM" they try and eat Burger king twice, and then at the end of the day realize the large amounts of fat they consumed doesn't leave any room for the 100g of protein they require.
In terms of electrolytes & aesthetics:
As i stated previously, electrolyte manipulation only becomes important when preparing for a show, outside of this context its completely irrelevant. Incidentally, having too little sodium can also have an impact on water retention (common on "clean" diets) so its best to avoid playing around with electrolytes completely unless you have a contest.
I've had clients come to me with 12%bf complaining that they need to manipulate their electrolytes to look more ripped - no you need to lose more fat.
As for your enzyme point, generally certain enzymes become inefficient when you consume too little of certain macros. So for example, if you happen to be on a low carb diet - the minute you carb up/reintroduce carbs you will become bloated because the enzymes invovled in digesting them haven't been used in a while - therefore they become inefficient at their jobs.
This issue with enzymes will happen regardless of the source of your macros.
I do agree with your final point on people not really understanding IIFYM, they assume it means eat whatever you want under a certain calories & have a habit of ignoring the "macros" part.
This is a lack of knowledge more than anything
