Got a great deal on chicken breast today so decided to make some random food, bit inspired by my friend who ate protein and carbs separately.
Keeping it super simple... Store bought chicken lemon marinade over the night.
Fry up a package of pre sliced bacon bits on the oven (170c), once they're brown and crispy add 2 cans of crushed tomato, tomato paste, one deseeded and chopped habanero, a can of corn, some diced paprika, 2 sliced onions, drizzle of honey and some grated garlic. A splash of acid, lemon, lime or apple cider vinegar etc, use what you like/have at home.
Add tiny bit olive oil, season with salt and pepper, mix and put back in the oven for about 10-15 minutes.
Meanwhile Fry up the chicken breasts in a large pan, about 60-90 seconds on each side, add all the chicken breast with the tomato sauce and bake in oven for another 15-25 min (depends on big the breasts are)
I use an oven temp and remove them at about 67-68c (Will keep rising to about 70-72c after you remove it from oven so don't worry)
And we're done...
Very easy way to cook 2 pounds of chicken, will be super moist and tender, rep me later
