Opinions and experience? I'm stuck

have you had your blood sugar checked, thats the only way to tell if your hypo. I have learnt the feeling of when im hypo, and matched it with glucose readings

I've got an appointment for a gastroenterologist coming up in a week, and hopefully we'll get to the bottom of it. Right now:
Stools are fatty and burning, but not runny or liquid
I'm still having cramps, not stomach but gut/intestinal
I'm really thinking I'm coming closer to figuring this out.

The latest blood work following a couple days of pale stools came back..normal I suppose, that is unless I'm really missing something. Usually issues with the liver come back showing a high AST ad ALT..mine were actually pretty low. I've read this too can indicate issues. My ALK Phos was also a little high, as was CO2 again.
Alk Phos: 128 (35-123)

AST: 6 (7-31)

ALT: 2 (5-30)

My liver enzymes usually look like this:
Alkaline Phosphatase 77 (32-122)

ALT 21 (0-55)

AST 23 (12-42)

I just don't get it. Maybe its nothing, but these numbers accompanied by my symptoms..I just don't know. I'm going in to see a GE May 6th, who will hopefully shine some more light on this.

I'm no Dr but what you described has many characteristics of Celaic. I can't comment on liver enzymes. Try cutting back on gluten and see if there is a change. It is a simple test...tough to stick with.
