Shrimp creole

3 tbls. cooking fat. (not the healthiest thing, but needed)
1 med onion sliced
1 med green pepper, chopped
2- 8 oz. cans of tomatoe sauce
1/2 bay leaf
7 oz's uncooked cleaned shrimp
1/2 tsp. salt (mrs. dash)
1/2 tsp. black pepper
2 1/2 cups cooked rice (make b4 hand)
Cayenne pepper to taste, (optional)

Melt cooking fat in at least a 2 qt sauce pan, add onions, green pepper, cook slowly, stirring occasionaly until onion is tender. Add tomatoe sauce, bay leaf, shrimp, salt and pepper. Simmer for 15 minutes at medium heat. Add the rice. Continue heating till the rice is warmed. Add cayenne pepper for taste, (be careful with that stuff, adds serious heat).
