how many sets are enough/too much?

I was doing the 5x5 routine with my initial five sets of 5 then another 2 exercises with 3 sets a piece. I wanna switch up my split to look as follows:

monday-chest/calves +light Cardio
tuesday-legs
weds-shoulders
thrursday-back
friday-bi's/triceps +light Cardio
saturday- Heavy Cardio
sunday- Heavy Cardio

I wanna add more volume since im splitting it up differently than before, whats the max number of sets i can do for each body part without over training? i only ask this because the 5x5 is too little volume for me.

also, comment on the new split as well. Thanks.

i did alot of reading on 5x5... 4 warm ups then a set on your 5reps max. doesnt gel with me. it has been proven but.. depends on your goals, if a bodybuiler i beleive you cant just favour 1 exercises like bench press with 5x5. if it power lifting sure. bodybuilding no. i would do
bench press 2 sets 6
incline bench press 2 sets 6
low incline dumbells press 2 sets 6
flat flyes 1 sets 6 (dropsets 6reps - then 6 again) three drops
chest example
two working sets only doesnt count the warm ups you do
warm ups are for warming the body enough to use the next weght
i think sets (working sets)
rough guidelines
biceps 4-5 sets
triceps 5-6
shoulders 6-8
chest 7-9
back 8-10
thighs 10-12 sets

how...can you explain this to me? and im not really paying attention to secondary muscles worked, so if by the 3 days in a row you mean shoulders,back, bi's/tri's it doesn't really matter to me.

It definately does not matter im so sick of people crying overtraining all the tmie.
 
ya bro, i train gunz 5 days a week bro, theres no such thing as overtraining, just undereating, bro.

What about tendons, joints, ligaments...don't these all need repair time ?
