Stuffing Ingredients:
Parmesian cheese 1/2 cup shredded--use fresh not from a can
1/2 cup hummus
small handful of chopped sun dried tomatoes
pinenuts or chopped pecans are good too--about 3 tablespoons full
parsley -handful chopped do not use dry parsely
basil small handful chopped
2 whole eggs beaten
black pepper to taste
mix ingredients and spread onto flattened flank steak roll and tie with string or pierce with toothpicks to hold together--grill or sear flank steaks in a cast iron pan at high heat--serve with marinara sauce or my favorite:
Mustard cream sauce
Heavy cream
spicy mustard
capers
In a saucepan heat and mix 1/2 cup of cream with one teaspoon of mustard, toss in a handful of capers and you have an awesome sauce.


wow husky i made these last nite for dinner..i had to bake the steak instead of searing like you suggested..also i didnt use any marinara suace but damn man those were good and the stuffed peppers, to die for...my man you have gotta keep them coming...thanks for dinner last nite.
 
Another great healthy snack

Blue Cheese Pizza

Ingredients:

Flour tortillas
1 whole egg beaten
Bleu cheese--lots of it
granny smith or similar sour apples
heavy cream
cinnamon
nutmeg

take 2 or 3 flour tortillas and wash with egg--the egg is a binder to stick the tortillas together
on stack of 2 to 3 tortillas coat the top with a smear of heavy whipping cream, lightly sprinkle with nutmeg. Slice very thin slices of granny smith apples place on top of tortilla stack, lightly sprinkle with cinnamon-no sugar. On top of apples crumble lots of bleu cheese. Place in broiler and broil until cheese is bubbly. Slice into triangles and serve--very good
 
Here is another one good if you have leftover grilled salmon

Salmon benedict

Ingredients:

Leftover piece or pieces of salmon
cream cheese
green onion finely chopped
black pepper
eggs
english muffins
asparagus spears--fresh only never canned
lemon juice
Paprika

Chop up leftover salmon mix with green onion, lots of black pepper and a tablespoon of cream cheese make into a patty and fry in a pan

Poach eggs--as many as you like
put 2 poached eggs on toasted english muffin top with salmon patty and 4 to 5 steamed asparagus spears--top the whole think with a quick hollandaise

quick hollandais- per every egg yolk --1/2 teaspoon of lemon juice whisk fast over low heat and once warmed pour over the top of salmon benedict-sprinkle with paprika -enjoy

Most of them I made up myself, or I remember eating them in good restaurants and I can reproduce them fairly well.
 
Here's another simple dish

Steamed mussels--or clams

Ingredients:

Big Bag of Mussels or Clams
Orange juice
garlic
bay leave
2 dried hot thai chili peppers

Put mussels--in large stock pot, add about 6 toes of garlic chopped, 2 bay leaves, and 2 dried hot thai chili peppers--add about 4 cups of orange juice and cook on high heat and cover. When mussels are open and steamy they are done.
 
Hey Husky, do you have any nice / simple recipes for chicken breasts? I bought a ton of chicken breasts and the recipes I usually use are getting quite dull.

The simplest is mix peanut butter with cayenne pepper and smear on chicken breast right after grilling it-tastes sort of like satay chicken and it is very easy.

Chicken breasts lack flavor so whatever you like makes a good marinade--Italian dressing overnight before grilling, lemon and garlic are good, jamaican jerk is my favorite.
 
Here's a great highly nutritious one-pot meal.

Lamb stew
Ingredients:

Lean young lamb meat cut up for stew 2 lbs
turnips 2 large ones-chopped into large chunks
carrots 3 large ones-chopped into large chunks
fresh rosemary 2 to 3 sprigs
garlic--5 to 7 toes
1 red onion chopped fairly large pieces
1 can of rotel tomatoes they are hot and spicy
olive oil 3 tablespoons
1 handful of sun dried tomatoes
1 red bell pepper-chopped
1/2 green pepper-chopped
grate one lemon's peel
1 handful of kalamata olives
1 cup chicken stock
1 stick celery finely chopped
1 teaspoon of black pepper

braise lamb in hot pot with 3 tablespoons olive, black pepper. Oncel lamb is browned and sealed on all sides of the meat, add chopped onions and celery. Once onions are getting translucent add rosemary, rotel tomatoes, chicken stock, carrots and turnips. Once the mixture is bubbling then Grate lemon peel into the mixture and add sun dried tomatoes, garlic. Let cook for about 20 minutes covered on low simmer. After 20 min, add green peppers, red peppers, and olives, cook for another five mintutes it's done.

I like it served with red beans and rice--I will give recipe for that later on.

mmmm looks great... I am addicted to Natural peanut butter and chicken breasts. I actualyl have chicken breasy marinating in jamaican jerk sauce right now.
 
Here is a great snack to have around

High protein homemade ice cream

You will need an ice cream maker for this, a cheap one can be had at Target or Wal Mart for less than $20.

Ingredients:
3 whole eggs beaten
Whole milk
Protien powder--I prefer ON 100% whey chocolate mint or chocolate-the other flavors are sickenly sweet.
vanilla extract
I also use a bit of almond extract too

6 to 8 cups whole milk
6 to 8 scoops protein powder
1 tablespoon vanilla extract
1 teaspoon almond extract
3 whole eggs beaten
Mix ingredients together put in icecream maker and you have a high protein ice cream with less sugar than normal ice cream it is delicious.

But then it's just a protein shake, if you freeze it in an ice cream maker it is a high protein dessert
