Here's a great recipe for eggs because it allows for lots of substitutions

This mornings breakfast frittata

A well seasoned cast iron pan works best for doing this recipe--If any old aunts or grandmas ever pass away make sure you get their cast iron pans.

Pre-heat oven to 400 degrees farhrenheit, lightly oil pan with peanut oil or vegetable oil, or lard--do not use canola oil or olive oil they will burn. Put pan into hot oven to pre-heat it while you are chopping up ingredients.

Ingredients:
Red bell pepper-saute with onions, mushrooms and celery
pepperoni thinly sliced about 6 slices
mushrooms sauteed-with onions, celery, peppers,
spinach two handfulls of fresh or one handfull of frozen
red onion finely chopped-saute with the mushrooms
brie- at least one large fist sized chunk-can substitute any cheese that you like except for bleu cheese it might not taste too good
1 piece of celery finely chopped-saute with onion and mushroom
7 eggs beaten
2 tablespoons butter for sauteed vegetables
One tablespoon freshly grated parmesan cheese-don't buy that canned crap

Layer sauteed vegetables on bottom of pan, then layer cheese, then pepperoni, then spinach and top with 7 beaten eggs poured over the top--sprinkle parmesan cheese on top place pan in hot oven and bake for approximately 15 to 20 minutes--
be careful to check on it-do not stir the top should be lightly browned and the fritata should be firm like scrambled eggs. This was my breakfast, I could not stop eating, it was so delicious.
 
you are a freaking eating machine and you are only motivating me to put on more size.. I got ways to catch up to you,,,what is it like 57 lbs i still got to go :-)
 
just made that nice spinach thing w\5 eggs...mmmmm taste good

I did 5 eggs spinach, swiss cheese, onions and parmison cheese

Super nutritious pasta sauce.

Ingredients:

2 lbs of italian sausage--not in casing
1 red bell pepper
2 handfuls of sundried tomatoes
1 bay leaf
3 green onions chopped
10 toes of garlic chopped
1 stick of celery chopped
2 tablespoons fennel seeds-mashed in a morter and pestle
1 large can or two regular cans stewed tomatoes
2 dried chili peppers-the red thai peppers are nice
olive oil
2 handfuls of fresh mushrooms sliced
pinch of salt
1 teaspoon of black pepper
pasta of your choice
1 whole egg-beaten

Grill large 2lb hunk of Italian sausage and red bell pepper that has been de-seeded and quartered

Cook pasta of your choice-I like barilla brand for dried pasta and I like the penne variety. Once pasta is cooked drizzle olive oil add a teaspoon of chopped garlic and egg --toss and put aside.

In a large pot saute mushrooms and chopped green onions in olive oil, add chopped celery and then add stewed tomatoes, sundried tomatoes, bay leaf, the rest of the garlic. Get to a bubbly consistency

Once bubbling-turn down heat a bit and add sausage cut into large bite sized hunks and chop roasted pepper and add--add the fennel seed, chili peppers, black pepper and a pinch of salt.

Heat up for another 5 minutes and put sauce on top of pasta-egg mixture--serve with asiago or parmesan cheese--do not buy that dried junk in the can-get some real cheese-parmesan is a dry cheese and it keeps for a long time.

Goat cheese stuffed peppers

Ingredients:

Pasilla or other thin walled peppers
Goat cheese (chevre) I like the herbed kind
Prosciutto or thinly sliced ham or pepporoni thinly sliced--Prosciutto is best


Core out pepper leaving a hole in the top, stuff with goat cheese. Plug the hole with prosciutto-and grill until skin browns

Very easy and a delicious nutritious side dish.

this bye far has become one of my favorite side dishes/snacks...i sub feta cheese instead of goat cheese...i actually find excuses to eat it with dinner when the family is eating other veggies...i just say some thing like "that corns got to much sugar in it...here i'll make my self this stuffed pepper."

simple recipe for leftover grilled fish

If you have a leftover piece of grilled fish-not fried here is a simple recipe

Ingredients:
grilled salmon, tuna, halibut etc
cream cheese
wasabi powder
green onion
black pepper
worchestire sauce

For every half pound of fish mix two tablespoons of cream cheese, 1 finely chopped green onion, 1/2 teaspoon of black pepper, 1/4 teaspoon of wasabi, 1 dash of worchestire

Mix a thoroughly and you have a high protein snack or sandwich spread
 
Here is a great soup recipe--soup is so easy to make

Ingredients:

8 cups chicken stock--either buy it at the store or make it homemade like I do. College Inn is a decent brand, Swanson is too salty

2lbs of leanest variety of ground beef
1 large bag of fresh spinach
4 large carrots
2 stick of celery
2 leeks-you can substitute bok choy as well both are good
1 cup freshly grated parmesan cheese
2 eggs
1/2 cup bread crumbs
1 small onion finely chopped
1/2 teaspoon nutmeg--freshly ground is best
2 grilled chicken breasts

For the meatballs take ground beef, eggs, breadcrumbs chopped onion, Parmesan cheese, and nutmeg-mix with hands in large bowl--form meat into meatballs about the size of a quarter in circumfrence--set aside meatballs to be added to the soup a bit later

Soup--Put all together----Chicken stock, carrots chopped into large chunks, celery coarsely chopped, leeks chopped, or bok choy chopped-heat to a light boil and then bring down to a simmer. Add chicken cook for about 10 minutes, add meatballs cook at a simmer for about a half hour--then add entire bag of spinach cook for another 15 minutes ---a wonderful soup

I will start off with something simple-but definitely a great bulking food

My mother used to make these for me and my brother once wrestling season was over.

Simple Massive Burger


Per burger 1lb of extra lean hamburger
Chopped up onion-red onion is best
1 egg per burger
another egg for topping
salt
pepper
worcheshire sauce 1 teaspoon per burger
chopped italian parsley-fresh two tablespoons per burger

Mix all ingredients in a large bowl form one pound patties and grill
Here is the kicker--serve each burger with an over easy egg on top along with cheese tomato lettuce, onion and I like hot sauce.
 
Lemon Dill Egg Salad

Ingredients:

One dozen hard boiled eggs--chopped
3 green onions finely chopped
1 stalk celery chopped
4 strips of bacon cooked very crisp and crumbled
1 red bell pepper chopped
1 lemon zested
1/2 teaspoon of lemon juice
1 handful of fresh dill chopped
1 teaspoon hot pepper flakes
3/4 cup ranch dressing
1 tablespoon cracked black pepper

* you can substitute fresh basil or tarragon for the dill- it changes the flavor dramatically but they are all good

Mix well and Chill for about an hour, serve as a sandwich spread
 
Ultimate chicken breast!

Chicken breasts
Thinly sliced ham--I like prociutto or cappicolla for this
Beef flank steak
large onion
spinach
greek olives
sundried tomatoes
olive oil
black pepper
paprika
feta cheese

I usually do this recipe with 4 to 5 chicken breasts

For every chicken breast
salt lightly, pepper heavily, and coat lightly with paprika, set aside
Pound out flank steak as thin as possible coat heavily with black pepper,
Wrap flank steak around chicken breast set in baking dish.

Chop olives, onions, sundried tomatoes and a handful of spinach mix with olive oil and feta cheese into a thick paste--coat flank wrapped chicken breast with mixture and wrap flank wrapped chicken breast with cappicola ham,
Cover baking dish and bake at 375 for about 2 hours or so--this is really good

WOW!!! steak and chicken and ham together...awesome.
 
I do not remember if I gave this one before but it is awesome--

Bleu Cheese pizzas

Ingredients:

Bleu cheese--gorgonzola is good too
heavy cream
cinnamon
nutmeg
green apples-sliced super thin with peel left on
flour tortillas

Put two flour tortillas together, coat lightly with heavy cream, sprinkle with cinnamon and nutmeg, put a layer of green apples on top and top with crumbled bleu cheese
Broil until bubbly and slightly golden--cut into wedges a wonderful snack
 
wasabi devilled eggs

Eggs hard boiled--1 dozen
wasabi powder or paste
softened cream cheese
black pepper
cayenne pepper

Hard boil a dozen eggs take yolk out mix a dozen yolks with 1 heaping tablespoon of wasabi, 4 tablespoons of cream cheese, some black pepper --put yolk mixture back into the whites of eggs and sprinkle with cayenne--much better than a regular devilled egg.
